Recipe For Healthy Living: Roasted brussel sprouts

Brussel sprouts contain good amounts of vitamin A, vitamin C, folic acid and dietary fiber. Moreover, they are believed to protect against colon cancer, due to their containing sinigrin. They contain three types of phyto's, all shown to have either protective qualities against cancer, or enzyme producing qualities that have been shown during research to fight cancer cells in different ways.

When boiling foods they tend to lose some of the vitamins and nutrients into the water. So here is a roasted brussel sprout recipe that is very easy to prepare and the brussel sprouts keep their natural nutty flavor.

Vicki's Roasted Brussel Sprouts
1 lb Brussels sprouts
2 tablespoons olive oil
2 cloves garlic minced
1/2 onion cut into thin slices
1 teaspoon salt
1 teaspoon black pepper

Preheat oven to 425 degrees. Toss all the ingredients except for the onions in a large bowl to evenly coat the brussel sprouts. Pour brussel sprouts onto a baking tray and spread apart. Bake for 20 minutes then stir or flip and add the onions and bake for 20 minutes more.

Recipe For Healthy Living: Perfect peppermint tea

Peppermint is an excellent source of manganese, vitamin C and vitamin A, carotenoids, and beta-carotene. Vitamin C, the main water-soluble antioxidant in the body is needed to decrease levels of free radicals that can cause damage to cells and decrease the risk of cancer. Peppermint is probably most famous for its use in our favorite white and red candy at Christmas time but it is gaining popularity to drink in teas to help decrease nausea.

A cup of fresh mint tea can help to soothe your stomach. If you are nauseous from cancer treatments try drinking peppermint tea. Another useful thing I found to work is to keep a small bottle of peppermint oil in your pocket and rub it on your wrist for smelling when you feel the queasy stomach coming on.

Whenever possible, choose fresh mint over the dried form of the herb since it is superior in flavor. The leaves of fresh mint should look vibrant and be a rich green color. They should be free from dark spots or yellowing. To store fresh mint leaves, carefully wrap them in a damp paper towel and place inside of a loosely closed plastic bag. Store in the refrigerator, where it should keep fresh for several days.

Recipe for a perfect cup of peppermint tea.
1 ounce fresh peppermint leaves
1 pint boiling water
Honey

Place the peppermint leaves in a cup and pour in boiling water. Cover the cup with a saucer and let it stand for 10 minutes. Scoop out the leaves with a spoon and add a little honey if you like it sweet.

Liver cancer doubled in one decade

Liver cancer experts attribute the rise in HCC, a highly aggressive cancer sometimes called hepatoma, to an increase decades ago in chronic infection with hepititis C & B and also chronic alcohol consumption. Worldwide liver cancer affects 700,000 people with 18,000 Americans diagnosed in 2006 and over 19,000 estimated to be diagnosed in 2007. The increase of this disease in the United States has doubled in one decade and over 16,000 people are estimated to die from the disease this year.

The rise in the United States is expected to increase. There are now 1.4 million people in the United States infected with HBV and 4 million are infected with HCV. Growing evidence suggests two other diseases now increasingly common in the United States to have significant risk factors for primary liver cancer. Diabetes and obesity.

HCC typically does not have any symptoms until its later stages which makes it difficult to diagnose. Traditional chemo does not treat the disease with much success and liver transplants or resection surgeries are needed. One reason why donors are very important in fighting this disease. When signs and symptoms do arise they might include weight loss, fatigue, pain in the upper right abdomen that may extend to the back and shoulder, feeling full after small meals, accumulation of fluid in the abdomen, nausea, loss of appetite, and jaundice.

Recipe For Healthy Living: tomato, cauliflower, tempeh salad

Scientists have long believed that the carotenoids found in fruits and vegetables have a cancer preventive effect. In particular, epidemiological studies have found that as the consumption of tomato products increases, risk of certain types of cancer decreases.

Vicki's Tomato, Cauliflower, and Tempeh Salad.
1/2 head cauliflower
1 block tempeh crumbled and cooked crisp
2 medium tomatoes chopped
10 to 12 scallions sliced
1/2 cup mayonnaise
2 tbsp lemon juice
1 tsp chili powder
1 tsp garlic powder
Salt and pepper
Lettuce leaves for serving (optional)

Put the cauliflower through a food processor with the shredding disk or finely chop by hand. Put in boiling water, cover and reduce heat and let sit for 2 minutes then drain water and place cauliflower in large salad bowl.

Crumble the tempeh into a skillet on medium heat with 2 tablespoons of olive oil. Add the chili powder and garlic powder and sautee for 7 minutes getting the tempeh crunchy. Add to the cauliflower along with the chopped tomatoes and sliced scallions.

Combine the mayonnaise and lemon juice to make dressing and pour over salad and toss. Salt and pepper to taste. Serve over a bed of lettuce leaves. Makes 4 to 6 servings.

Recipe For Healthy Living: Spicy tempeh tacos

Studies show that diets high in fiber and low in fat can help prevent cancer. Like tofu, tempeh is made from soybeans, but tempeh is a whole soybean product with different nutritional characteristics and textural qualities. It has a higher content of protein, dietary fiber and vitamins compared to tofu. In the past five years tempeh has grown so much in popularity that it is now available in the refrigerated section of many supermarkets. Here is a simple way to prepare tempeh that both kids and adults love.

Vicki's Spicy Tempeh Soft Tacos
Serves 4

1 block tempeh crumbled
1/2 vegetable broth or water
1 red bell pepper chopped
1 onion chopped
1 tbsp chili powder
1 tbsp garlic powder
1/2 tsp cayenne pepper (can leave out if you don't want spicy)
2 tbsp olive oil
1 cup cooked black beans or pinto beans drained
1 tomato chopped
handful chopped lettuce
grated hard soy cheese if you want vegan or cheddar if vegetarian
8 whole wheat tortillas

Recipe directions

Saute the tempeh in the olive oil on medium low heat for about 3 minutes. Add red pepper and onion and continue to saute for about 5 minutes more. Add the spices, 1/2 cup broth or water and the beans and cook for about 5 minutes or until most of the liquid has evaporated.

Serve in the tortillas with the chopped lettuce, tomato and cheese.

Occupational risks of bladder cancer

The National Cancer Institute shows studies have found the following risk factors for bladder cancer.

1. Age - The chance of bladder cancer goes up as you get older and is rarely found in anyone under 40 years old.
2. Tobacco - Cigarette smokers are three times more likely than non smokers to develop bladder cancer.
3. Occupations - People who work in these professions or who handle these products have a higher risk of developing bladder cancer. Rubber, chemical, leather, textile, printers, painters, machinists, metal workers, hairdressers, and truck drivers.
4. Infections - Certain parasites increase the risk of bladder cancer.
5. Race - Whites get bladder cancer twice as often as African Americans and Hispanics. The lowest risks are Asians.
6. Gender - Men are three time more likely to develop bladder cancer which may be because of the above occupational risks.
7. Chlorine - By products of chlorine are being closely studied.
8. Saccharin - The artificial sweetener has shown to cause cancer in animals and is being studied closer for the risks on humans.

If you have blood in your urine, pain during urination, or frequent urination or the feel the need to urinate often, please discuss your concern with a doctor. Early detection of bladder cancer has been a proven factor in the survival rate of this disease.

Signs of male breast cancer

Each year more than 211,000 American women learn they have breast cancer. Breast cancer is the most common type of cancer among women in this country other than skin cancer. But breast cancer is not just a cancer that strikes women. Each year 1,700 men in this country will learn that they have breast cancer. About 500 men will die from the disease. So it is just as important for men to know the signs they might experience if developing breast cancer and act on them immediately with a visit to a doctor. It is important to know your body and to recognize changes that might be taking place.

Signs of Male Breast Cancer

1. Abnormal lumps or swelling in either the breast, nipple, or chest muscle
2. Skin dimpling or puckering
3. Nipple retraction (turning inward)
4. Redness or scaling of the nipple or breast skin
5. Nipple discharge

Hope is necessary for healthy coping

Hope is a complex concept and one that is often misunderstood by many people including health care professionals. Many people tend to interchange the terms of wishing, optimism, and hope, but the three have significant differences.

Wishing is usually specific in that you wish for something you desire. It is positive in nature. Optimism emphasizes the positive aspects of a situation and is considered to be a positive trait. Both of these have places in our lives but to live with a disease like cancer and to get through treatments, navigate health care systems, and to overcome society's negative views about cancer as a death sentence, a person must have a strong sense of hope.

In stumbling upon an article published by the National Coalition for Cancer Survivorship written by Elizabeth J. Clark, PhD entitled "You Have The Right To Be Hopeful", I realized that without this inner strength, this determined will power, this drive, that hope creates, there would be a lot less survivors in this disease. It is a good read and I am passing along the link to the free PDF file for others to enjoy and learn from.

1. Hope constitutes an essential experience in the human condition.
2. Hope means desirability of personal survival and the ability of the individual to exert a degree of influence on the surrounding world.
3. Hope is necessary for healthy coping.
4. Hope is a cognitive affective resource that is a psychological asset.
5. Hope is a mental willpower and is a sense of mental energy that helps move a person toward a goal.

White foods

If you eat a lot of things with a high glycemic load, which is a measurement of how quickly food raises your blood sugar, you may have problems not only related to diabetes or being over weight, but you could run a higher risk of colorectal cancer. A Harvard Medical School study involving 38,000 women saw an increased risk of colon cancer related to the white foods like pasta, white rice, white bread, potatoes, and pastries. The lower glycemic load foods like whole wheat bread or multi grain breads and brown rice comes with fiber. Another Harvard study showed an increase in the risk of pancreatic cancer in women who are overweight and sedentary.

Genetic screening for cancer risks

Is the cancer in your family inherited? Some families experience large amounts of cancer and whether it is environmental, every day living habits, or genetics are all factors that should be looked into. Genetic testing, usually performed with a blood sample, may provide information about you and an increased risk for cancer because of family genetics.

For instance, nearly everyone born with familial adenomatous polyposis (the genetic predisposition to colon cancer) develops the disease by age 40 if preventive surgery isn't done. Knowing this early can aid in prevention and early detection. Talk with your doctor about genetic counseling. A Genetic Counselor provides individuals and families with information on the nature, inheritance, and implications of genetic disorders to help them make informed medical and personal decisions. Genetic counselors often work in clinics with oncologists or gastroenterologists and focus on cancer risk.

Recipe For Healthy Living: Orange and avocado salad

Eating an orange every day can not only boost your vitamin C but it can help get rid of a strain of the H. pylori bacteria that causes peptic ulcers and can lead to stomach cancer. Researchers in San Francisco found that infected people with high levels of vitamin C in their blood were less likely to test positive for the cancer causing strain. Here is a delicious, colorful, and healthy salad to serve your family. Remember to always buy organic when available.

Vicki's Citrus/Dijon Salad Dressing
4 tbsp. Orange juice
1 1/2 tbsp. Olive oil
1 tbsp. Lime juice
1 tbsp. Honey
1 tsp. Dijon mustard
1/2 tsp. Salt
1/2 tsp. Pepper
Whisk together to make citrus salad dressing

Vicki's Orange and Avocado Salad
1/2 of a 10 oz. bag of mixed salad greens
1/2 of a 10 oz. bag baby spinach
1 Ripe avocado, peeled, seeded, and diced
2 Oranges peeled, seeded, and cut into slices
1 Cup grape tomatoes
1/2 Cup shredded carrots
3 Green onions, thinly sliced
1/4 cup raw sunflower seeds
Mix ingredients and toss in a large bowl then drizzle with the citrus salad dressing.
Serves 4.

Coffee and liver cancer

Can coffee reduce the risk of liver cancer? According to findings published in the medical journal Gastroenterology it can. "Data on potential beneficial effects of coffee on liver function and liver diseases have accrued over the last two decades," states Drs. Susanna C. Larsson and Alicja Wolk, from the Karolinska Institute in Stockholm.

11 studies involving 2,260 liver cancer patients and 239,146 individuals without liver cancer showed that for every 2 cups of coffee per day, the investigators observed a 43 percent reduced risk of liver cancer. Coffee contains large amounts of antioxidants, such as chlorogenic acids that have an inhibitory effect on liver cancer.

Recipe for Healthy Living: Steel cut oats with blueberries

Since the 1970s, researchers have suspected that diet and nutrition are related to colorectal cancer risk. Numerous studies published since that time have confirmed the connection between what we eat and risk of this cancer. Many health experts agree that a high fiber diet is important for cancer prevention, but questions remain about how much and which types of high fiber foods may reduce colorectal cancer risk most effectively. This has led to interest in specific high fiber foods, especially whole grains.

Start the day with a bowl of whole grain cereal or oatmeal. For cold cereals, choose one that contains at least 6 grams of fiber per serving and make sure you pick one where sugar does not appear first, second or third in the ingredient list. Oatmeal is not only high fiber but studies show that it helps reduce cholesterol. But if you are like me I am not fond of the mushy breakfast food. Until a dear musician friend introduced me to steel oats. Now I can't get enough of these nutty oats and even eat them for late night snacks.

Steel cut oats are whole grain groats which have been cut into only two or three pieces. Which means the the inner portion of the oat kernel is not missing like in rolled oats. They are golden in color and resemble small rice pieces. Steel-cut oats are also known as coarse cut oats, pinhead oats, Scotch oats, or Irish oats. Because the steel cut oats are more natural with less pre-processing, they may be more nutritious than the more popular rolled oats. But to me they give off a more nutty taste and I like the small crunch over the mushy consistency of the rolled oats. The cooking time is longer on steel cut oats but really worth the wait.

When shopping for them in your grocery store, look for canisters much like coffee cans as they are kept in air tight containers.

Preparing your Steel Oats.

1 cup steel cut oats
4 cups water
1/2 tsp salt
1 tsp butter
Fresh Blueberries or other fresh fruits.

Combine oats and other ingredients in medium saucepan and bring water to a boil over high heat, then reduce heat to medium. Simmer for 30 minutes stirring occasionally to keep from sticking on the bottom. For the last 5 to 10 minutes of cooking time you will need to stir more frequently as it thickens. Spoon into a bowl and top with fresh fruit. Some people like to add a little milk to the bowl to give them a creamy texture. Makes 4 servings.

Tips on choosing a wig

Most women who are faced with hair loss due to radiation or chemo usually get at least one wig and alternate wearing the wig with hats, bandannas, and scarves. Here are a few tips to get ready for wearing a wig and tips on choosing a wig.

If your hair is long, consider having it cut shorter so that switching to a wig or other head attire will be less noticeable. Once your hair begins falling out, many former patients advise shaving your head. This puts you in control of the situation and eliminates finding your hair all over the pillow or in the shower.

Some women rush out and buy an expensive natural hair wig and then regret it later because not only is it expensive but it requires a lot of upkeep. Synthetic wigs are less expensive and are easier to maintain and they look and feel natural. So keep in mind that six months after your last treatment you should have your hair back again. It may not be the same color and texture as before your treatments but it is natural.

Before starting treatments take a current photo of your hair and even save a swatch from the top front of your head in case you want to find a wig close to your present color. Use lighting near a window or outside to match the wig to your hair swatch or photo. if You want to purchase your wig before your hair falls out, measure your head with your hair slicked down. Always measure around the back of your head with a tape measure above your eyebrows and ears. If your head measures between size ranges, choose the larger size. You can also consider buying or using a hat sizer.

The wig will not look natural if it's pulled too far down in front and it should never be placed over your ears. Treat your wig like your own hair when styling and remember your beauty shop or hair salon personnel can always help you with styling your wig just like your own natural hair.

Know the signs and symptoms of myeloma

The American Cancer Society estimates that approximately 16,600 new cases of myeloma are diagnosed each year in the United States. Bone pain is the most common early symptom of myeloma. Most patients feel pain in their back or ribs, but it can occur in any bone. The pain is usually made worse by movement.

Patients fatigue more easily and often feel weak. They may also have a pale complexion from anemia which is a common medical problem for patients with myeloma and may contribute to the fatigue. If the disease progresses, the concentration of normal cells in the blood may also decrease. Headaches, bruising, nose bleeding, gastrointestinal bleeding, and tingling or numbness in extremities are all symptoms of myeloma.

Patients may have repeated infections because antibodies to invading viruses, bacteria or other disease agents are not made efficiently of in adequate amounts. Urinary tract, bronchial, lung, skin, or other sites of infection may be the first sign of the disease. In addition, recurrent infections may complicate the course of the disease.
